Black Bean Brownie-kins

These are a legitimately delicious healthy version of fudge brownies.

I got the recipe from Chocolate Covered Katie here, and made a few modifications based on ingredient & kitchen equipment availability.

These delicious treats are made of black beans, maple agave syrup, quick oats, cocoa powder, vanilla extract, vanilla bean yogurt, and chocolate chips. Who would have thought black beans cold taste so good?

I didn’t have a blender or food processor, so I used a potato masher to mash the beans.

Other substitutions included:

  • 1/2c Maple Agave Syrup (Trader Joes) instead of Maple Syrup & Stevia
  • 5.3 oz Vanilla Bean Greek Yogurt (Trader Joes) instead of Vegatable Oil

      Thanks! Definitely use a blender/food processor for the beans, mine came out a little chunky. Eh peds, parents & kid germs, my husband & I spent my entire Peds rotation being sick! Good luck with interviews!
